Cheesy Salsa Chicken Casserole

INGREDIENTS LIST FOR THE CHEESY SALSA CHICKEN CASSEROLE

2 lbs (900g) boneless, skinless chicken breast
1/4 teaspoon cumin
Salt and fresh cracked black pepper
Crushed red chili pepper flakes, optional
1 cup mozzarella cheese, shredded (or Monterey Jack, or white cheddar…)
Fresh chopped cilantro, for garnish

The salsa

4 ripe tomatoes, cored and quartered
1/2 onion
3 garlic cloves, peeled
3 jalapenos, stemmed and seeded
1/3 cup fresh cilantro
3 tablespoons fresh lime juice
1 tablespoon ground cumin
1 1/2 teaspoons salt

DIRECTIONS

1. Preheat your oven to 375°F (190°C). Lay the chicken flat in a large baking dish and season with cumin, crushed red chili pepper, salt and pepper.

2. Make the salsa: Place the fresh tomatoes, onion, garlic, jalapeƱo, cilantro, lime juice, cumin, and salt in a food processor. Pulse briefly to crush the ingredients and set aside.
